To the south of Padua, the Euganean hills form a green and lush oasis, a hundred small wooded hills, away from the hustle and bustle of the town. This is the area where excellent wines DOC and delicate oils are produced and where a genuine cuisine uses the spontaneous products of the hills.
Here the search for spontaneous sprouts and herbs helps to create tasting soups, delicate risottos, smelling omelettes and colourful side dishes: it is here that we find the "rampussoli", the "pissacani" (dandelions), the "bruscandoli " (hop), the" rosole " (corn rose), the" gallinelle" (corn salad) and" sparesele " (slender green asparagus).
The homemade pasta like the bigoli "al torchio" , which are excellent if served with duck sauce, homemade tagliatelle, or rice and peas are part of the country tradition and are still very much present on the menus restaurants and trattorias of the Hills.
Among the meats, don't miss to try the famous Gallina Padovana (Paduan chicken), served in various specialties, or rabbit in the pan, guinea fowl stuffed, fried chicken. From Torreglia arrive on the tables and around the famous torresani, the pigeons of the tower.
This is the area where 13 DOC wines are produced, including the famous and award-winning Fior d'Arancio. You can discover them in the wineries of the Euganean Hills Wine Route . Honey and oil are also among the specialties of the Hills, you can buy them directly from the mills or in the delicious local specialties food stores.
