The South-Eastern part of the province of Padua is influenced by the nearby Brenta Riviera and Venice Lagoon. The main specialty here is fish. This is also the area of production of sausages and horse meat.
In the territory around Piove di Sacco the main ingredient is fish, fish of all types: lagoon, valley and sea (sea bass, sea bream, eels, mullet, sardines and anchovy) and river (catfish, tench, carp , rudd and perch-trout).
Frogs are also found here, prepared in risotto.
There is a widespread use of horse meat for the preparation of stews, sauce for pasta, steaks or as sfilacci (shredded horse meat).
